Ingredients:
1/2 - 16 oz. box Tri-Color Rotini Pasta
(You can swap Dreamfield's Penne pasta for a THM version)
1 - Lg. Tomato, diced
1 - Lg. Cucumber, diced
1/2 - 9.5 oz. jar kalamata olives, drained
1 - 7.5 oz. jar marinated artichoke hearts, drained
1 - 7.5 oz. container of crumbled Feta cheese
1/2 - 16 oz. bottle of Kraft Greek Vinaigrette
(THIS is a great from-scratch THM dressing recipe too!)
Directions:
1. Cook pasta per directions on the box.
2. Toss all remaining ingredients together.
3. Drain and rinse pasta in cold water, mix into remaining ingredients.
4. Refrigerate for 2 hours, serve, and enjoy!
You can serve this yummy-ness as a side to any desired meal. I've also mixed a can of tuna into a serving for protein, and eaten it on it's own!
Now, if only the never-ending mountain of laundry was this quick and easy!
Are there any foods you MUST have when summer comes around? I love getting new recipe ideas, so feel free to share them in the comments!
